Mossman local doing amazing work ahead of Taste Port Douglas

Sizzling sausages and juicy pork ribs are Tony Morana’s specialty when it comes to wood and charcoal fired BBQs, making him the perfect man to provide handcrafted BBQ gear during Taste Port Douglas’ Fat Mango BBQ day.
The BBQ event will be all about showcasing the local regions produce with celebrity chefs cooking a diverse range of foods using several different BBQ techniques.
Mr Morana, who owns Australian Campfire Kitchens in Mossman, will be providing all of the custom designed gear, including a fire cage of 2,5 metres wide and 2,5 high which will be hanging whole kingfish and vegetables.
“We also provide an asado cross fire pit 2,5 metres wide to cook three splayed whole lambs and on top of that we have five open fire pits, two for birria tacos and one with our big bbq pan cooking chilli mussels, another one will be doing skewered beef picanha and the last one will be cooking juicy pork ribs.”
Learning from top chefs
The Fat Mango BBQ will see top chefs like Colin Fassnidge and Anthony Puharich provide tips on how to cook the perfect BBQ, while interacting and having conversations with the audience.
“It’s a fantastic opportunity for us to meet and learn from the chefs that are at the top of their industry,” Mr Morana said.
His passion for everything BBQ goes a long way back. “Our business philosophy has always been to create Australian handcrafted cooking gear that would stand the test of time. Able to be handed down through the generations to bring family and friends together and enable them to cook food from all cultures.
“We enjoy the challenge of creating visually exciting and unique cooking equipment to bring people together and celebrate food of many different nations cooked over fire.”
Community involvement
In the past, Mr Morana and his wife have sponsored numerous other local and community events and have been heavily involved with the local junior football club, running the canteen and fundraising.
“This is where our relationship with Reina and Spencer Patrick from Harrison’s began as they were also involved in the club. We have worked with them on previous Taste Port Douglas events.
“Having and being a part of a small business community in Far North Queensland we find it very important to back and support each other.
“We’re excited that the event is right here in our own backyard celebrating local produce and small businesses.”
Taste Port Douglas will take place on August 13-14. Day one will kick off with a host of food stalls and guest chefs while the following day the Fat Mango BBQ will take place. For tickets click here.
