Meet 30 year veteran Eddie Basich, head chef of Zinc Restaurant

Zinc’s new chef Eddie Basich is a man with flair who likes to flirt with his diners’ taste buds and excite the palate. And he will not only provide a new and refreshing touch to this well-established Port Douglas eatery, he will win many friends with his charismatic and strong communication skills.

He is a 30-year veteran in a tough and demanding industry and he will be putting his rich experience, obtained in London at a Michelin Star restaurant, Surrey and parts of Australia, to good use.

“I see the kitchen as our stage. I like the idea of an open kitchen where people can see what is happening. I like to see the plates prepared and then delivered to the tables.

“And I then want to mix with the clientele to learn about their experience. I want feedback about the food, its taste, preparation and presentation. But I also want to know what the diner thought of the overall atmosphere in the restaurant, the ambience and other factors that had an influence,” said Basich.

A favourite of his is working in regional areas and using the local produce, which is readily available from areas such as the Tablelands and the Daintree.

“This motivates me and there will be elements of local produce in my dishes. Diners will also observe a Mediterranean style with crisp and fresh meals with lemon juice.

“I will be adding sea food to our menu, a change for Zinc, along with a number of my signature dishes,” he said, adding Zinc’s famous Goat’s Cheese Soufflé and Beef Carpaccio will remain.

Zinc, meanwhile, has also made a few changes. From April 3, they will be open all day from 7am until midnight, which sees the return of breakfast. They are also bringing back their late night lounge until midnight every night for the season.
